Keto Brussels Sprouts with Bacon …I don't know what my favorite word in that sentence is. I love everything about this roasted Keto Brussels sprouts recipe, it is seriously one of my personal favorites and makes a delicious side to just about any protein you could pair it with.

Keto sides can be hard, the main part of a keto meal is usually pretty easy.  But a single serving of a ribeye steak or chicken breast doesn't exactly make a meal. Unless I make plans for side dishes I end up with a salmon filet and string cheese or pulled pork and pecans.  Not that there's anything wrong with that, but it's a little bit of a mish-mash and not entirely satisfying.

That's where this super easy and mouthwateringly delicious side comes in. (I'm not sure if mouthwateringly is a word or not, Google says no…but I'll let you be the judge).

Anyways, I've talked in the past about being a picky eater for the first ⅔rds of my life and Brussels sprouts were a food I missed out on way too long. I used to call them lilliputian cabbages (I was a weird kid… well-read, but weird). If you're typically not a Brussels sprouts fan, this recipe has the power of bacon to help you through it.  If you already love Brussels sprouts then here is just another variation to add to your repertoire.

Are Brussels sprouts healthy for a keto diet?

Yes! Brussels sprouts are totally healthy for a low carb, gluten-free, keto diet. Brussels sprouts have about 4.5g net carbs per cup making them a great low carb vegetable to add to your diet.

Do I have to char the Brussels sprouts?

If you like flavor. No really, charring the sprouts gives them a crunchy chip-like exterior and a smoky flavor. That's why most people who don't typically like Brussels sprouts like these!

To make sure that the sprouts get crispy you'll want to remove the outer leaves and cut them in half. If they are very large maybe even cut them into thirds or quarter them.

To cook Brussels sprouts you'll want to add the Brussels sprouts cut side down to the hot skillet and NOT MOVE THEM until they are charred. Seriously, if you mess with them they will steam and no one wants steamed sprouts, trust me. By cooking them in the bacon grease with a little additional olive oil (you can also use avocado oil, coconut oil, tallow, lard, or algae oil) you get a nice smoky flavor.

After charring them you'll stir occasionally to make sure the other sides get cooked. Season them with salt and pepper to pull out all the flavors.

Do I have to add bacon to these Keto Brussels Sprouts?

Nope, but it's bacon??? Really though, you can leave it out just make sure to add a tablespoon or two more of oil since you won't have the bacon grease in the pan.

Can I add cheese to keto brussels sprouts?

Yes if not dairy-free, shaved parmesan cheese is delicious in this keto low carb recipe!

  • 4 slices bacon
  • 2 cloves garlic
  • 1 teaspoon salt
  • 1/2 teaspoon pepper
  • 12 oz Brussels sprouts
  • 1 teaspoon paprika
  • 1 tablespoon olive oil
  • Chop bacon into cubes. Fry until crispy 3-4 minutes, drain on a paper towel.

  • Add the olive oil to the pan with spices and sprouts, cook 5 minutes add garlic, cook another 5-7 minutes until charred and crispy.

  • Add bacon back to skillet and cook another minute, then serve.
